Broiled Parmesan Tilapia

We LOVE fish and we LOVED this! Plus it FAST and EASY to make!
  • 2 lbs. Tilapia fillets
  • 1/2 cup Parmesan Cheese
  • 1/4 cup butter, softened
  • 3 Tbsp mayo
  • 2 tbsp. fresh lemon juice
  • 1/4 tsp. dried basil
  • 1/4 tsp. ground pepper
  • 1/8 tsp onion salt
  • 1/8 tsp celery salt
Preheat broiler. Grease broiling pan or line with aluminum foil.
In small bowl mix together all ingredients except Tilapia. Set aside.
Arrange fillets on pan and broil a few inches from heat for 4-5 min. Flip fish over and broil a few more minuets. Remove fillets from oven and coat with mixture on the top side. Broil Tilapia for 2 more minuets or until fish flake easily. Don't overcook.

Coconut Crusted Salmon

4 salmon fillets
1/2 cup buttermilk
1/2 cup panko or dried breadcrumbs
1/4 cup sweetened flaky coconut
salt and pepper
Lemon Pepper seasoning (opt.)
cooking spray

Preheat oven to 350* F
Coat 9x13 in. baking dish with non-stick cooking spray
Put buttermilk in a shallow bowl and dredge salmon in it, covering completely.
In another shallow bowl combine, breadcrumbs, coconut, and seasonings. Place salmon, one at a time in breadcrumb mixture; coat completely.
Place salmon in baking dish and cover salmon with any remaining crumb mixture. Spray salmon with cooking spray so salmon will be crispy.
Cover with foil and bake for 30 minutes or until salmon is flaky. Last 5 minutes remove foil.

Lemon and Potato Flake Tilapia


1/2 cup buttermilk
2 cloves garlic, minced
1/4 tsp. black pepper
1/4 tsp. salt
1 tbsp. Lemon Pepper seasoning
1 cup instant potato flakes
4 fish fillets (Tilapia, snapper, cod, etc.)
4 tsp. butter
1 lemon
Preheat oven to 375* and grease a casserole dish with cooking spray.
In a shallow bowl combine buttermilk, garlic, pepper, salt, and juice from half of lemon. Place potato flakes in another shallow bowl with lemon pepper seasoning. Dip fillets into buttermilk mixture, shaking off any excess liquid; then dredge in potato flakes. Coat all fillets.
Place in prepared baking dish. Place one teaspoon of butter on the center of each fillet. Bake for 20-25 minutes, or until fish is golden or flakes with a fork. Sprinkle remaining lemon over fillets, according to taste.

Shrimp Dip


1 (8 oz.) cream cheese, softened to room temperature
1 pint sour cream
1 can baby shrimp, drained
1 tsp. Nature's Seasoning (opt.)
Bag of potato chips
Whip cream cheese and sour cream together until smooth. Add shrimp and seasonings.
Serve cold.

Lime Tilapia



Butter cooking spray
4 (6 to 8-ounce) tilapia fillets
Salt and freshly cracked black pepper
1 lime finely grated zest and juice
2 tablespoons butter

Preheat oven to 375 degrees F. Coat a baking sheet with a nonstick butter spray.
Rinse fish and pat dry; place on the prepared baking sheet. Season each fillet with salt, cracked pepper, lime zest and lime juice. Add fish to the pan. Place a pat of butter on each fillet and cook in the oven for 8 to 12 minutes.

Augrotin Halibut

Halibut can be a little bit pricey. I buy my fillets frozen from Costco and half them.
You can also use another white fish such as Tilapia if you want to save on costs.
4 pieces of Halibut
half of a lemon
Salt and pepper to taste
Lemon pepper seasoning
1 cup mayo (or use plain yogurt to make eat lighter)
2 cup grated Swiss cheese
seasoned bread crumbs
Place halibut in a greased baking dish. Squeeze lemon over fish and then sprinkle seasonings on top. Mix mayo and Swiss cheese and place over fish. Sprinkle bread crumbs over fish until completely covered. Bake at 375 for 25-30 minutes or until done.
